Pistachio Oatmeal

Happy National Pistachio Day!! 

Bet you didn’t know that now did you? 🙂

Okay, so originally I wasn’t going to make this particular recipe for a few weeks, but when I saw that it was National Pistachio Day.. well I just had to. 

I have to say that this is probably my new favorite way to cook oatmeal.  I tested out a new cooking method, and it was a complete success.  (I’ll explain through the cooking steps).

This recipe does have a secret ingredient too… 

Try to guess.  Then see if you’re right


Okay here’s the recipe 

     1. 1 1/2 cups water

     2. 1/2 cup oats

     3. 2 tbsp instant pistachio pudding (did you guess right? 🙂 )

     4. 2 tsp chia seeds

     5. 1 tsp almond extract (optional, but highly recommended)

     6. pistachios for topping


Okay, so the night before combine the water and the oats.  (Make sure they’re in a microwave safe container with A LOT of extra room… these expand like 5 times they’re original size.  You don’t want a mess).  Microwave for about 5- 6 minutes, and then let sit for 5 minutes.  Check the consistency.  If it’s too watery for your taste, microwave a little more.

Once it’s to the right consistency, add in the chia seed, almond extractand the pudding.  Then set in the fridge


In the morning, add a little bit more water to the oats, and microwave if desired.  

At this point I added a bit more almond extract, and then topped with pistachios.
