On my last food post, Why Chia Seeds, I stated that I would be posting recipes featuring chia seeds. Well, I never break my promises 🙂
This particular recipe is like nothing I have ever tried before. It combines combinations that you would not think to put together, but when they are, they work wonders.
Now, all of my recipes generally have the option to prepare at night. For this one, if you don’t want to be waiting in the morning, DEFINITELY prep overnight.
All you have to do is combine one cup of almond milk and 2 tablespoons of chia seeds in a container. Cover and set in the fridge. If you do decide to do this without waiting overnight, let the seeds set at least 20 to 30 minutes before carrying on.
Here’s the full recipe:
1. 1 cup almond milk
2. 2 tbsp chia seeds
3. 1 tsp grated orange zest
4. a pinch of ginger (to taste)
5. 1/8 tsp almond extract (optional, but I seriously love this stuff)
6. dried cherries (to taste)
7. 2 tsp unsweetened coconut
8. Pistachios (as many as you’d like)
9. A drizzle of honey for sweetness (optional, but I think it really adds to it)… can use any other sweetener you’d like
(As you can see, I pre prepped all of the ingredients the night before so that I could put everything together that much quicker… Next time I’d wait to do the orange zest because it kind of clumped together a bit).
When they’re in prime form, the chia seeds should look like this:
Finally, all you have to do is assemble. It’s extremely easy, and I can’t even explain how refreshing of a breakfast these are.
Also, I personally think the color combination is pretty cool with this recipe 🙂
