Coconut in general is extremely healthy. Even though it is higher in fat, it’s all GOOD fat. You don’t need a lot of it to make an impact either, which makes it prime for topping off dishes.
One of the most common coconut ingredients you will find in healthy “dessert” recipes is coconut butter. Now, I don’t use it as often as I probably should, but I plan on experimenting with it more.
Unfortunately, one jar of coconut butter can be between 15-20 dollars! Yikes!! I don’t know about you, but I really do not have the ability to constantly throw down that much money on jars after jars of one ingredient. (Even though you don’t really need a lot in recipes, it’s not a bottomless pit, it’ll run out).
Lucky for us though, you can make this at home with only one ingredient and a blender or food processor. That’s it!
Be aware though, coconut butter can be weird. It actually will turn out differently depending on what the climate you are in is like. If it’s warm and humid, it will form more of a liquid. If it’s really cold, you’ll need to microwave it to let a liquid. It’s freezing here, so I wasn’t able to get the perfect consistency that I would have liked… even with my vitamix.
Take out your blender and coconut.
You can use either unsweetened flakes or unsweetened shredded coconut. Don’t use sweetened, it’s not going to turn out right.
This is how much coconut I used, you can use how ever much you want. It’s only about two handfuls.
Now blend. This takes quite sometime. It took about 5 minutes with my vitamix. For a food processor it could take between 10 and 15, which can be a bit annoying if you have to hold down a button for your food processor to work.

You can melt it in a microwave or even in boiling water (like set the jar into boiling water, don’t pour the coconut in). You can add a bit of water if it’s not forming a liquid, not a lot though.
