Low Calorie Strawberry Shortcake Protein Pancakes

The kitchen is finally almost done!!!!  They’re just going to be coming in today to do some last minute touch ups, and then we’ll be domestic again 🙂

The stove was installed yesterday though, so what does that mean? PANCAKES!!!!!

Man how i’ve missed these things.

Literally the first thing I did when I woke up today was run downstairs to commence making these.

Hey, you would do the same if you were kitchenless for weeks on end 🙂

Pancakes are usually viewed as very high calorie, high carb, bad for you, once in awhile treats.  Actually, i’ve read about many people indulging in stacks of pancakes as their “cheat meals” for the week.

Well, this particular recipe is completely clean, and actually is probably a lot healthier than almost any healthy cereal out there.

So how is this even possible?

All you are going to need is

1. 1 scoop protein powder (I used a vanilla flavored one)

2. 1 tbsp ground flax seeds (or ground chia seeds if you don’t have flax… flax is a superfood btw 🙂 )

3. 1 egg separated (we’re going to be whipping up the white)

4. a sprinkle of cinnamon (optional)

5. 1/2 tsp butter extract (optional but highly recommended)

6. about 1/3 cups of water (pretty much just until it’s a pancake batter consistency)

7. 1/4 tsp baking powder

Mix all of the ingredients together except the egg white and the water.

Whip up your white.  If you don’t know how to do this, I explain in this post.

And then fold them into the batter.

Finally mix in your water, and you are ready to go.

Make pancakes! Need I explain more?… I’m pretty sure making pancakes was one of the first cooking-related things we all learned how to do.

Now we’re going to make a quick strawberry sauce to finish these off.

Simply microwave strawberries for about 2 minutes.  Stir, and then add in one packet of stevia.  Microwave another 30 seconds.  Then you’re done.  That’s it.

Stack your pancakes, and top with the strawberry sauce.

My childhood favorite was definitely chocolate chip.  I’ll make a recipe for those if you’re interested.

  1. I like plain pancakes that are thick enough to soak up some syrup, but not bread or cake like. I like to try new things, but my favorites are almost always the original

    • If you’re looking for ways to improve your regular pancakes, I actually have a few tips that I have picked up along my researching pancake making.

      1. Whip the egg whites like I did in this recipe. It really adds air to the cakes, and makes them sooo much more fluffy
      2. Don’t overmix. There should be lumps in the batter. Try to stick to only 10 stirs. Any lumps will cook out
      3. add 1 tbsp of white vinegar to every cup of milk that you use. Let them sit for a good 30 minutes. Clumps should form. It’s amazing how much this does for the taste and texture of the overall pancake. It’s pretty much a cheaper way to creating your own buttermilk.
