Yes, it can be done. The decadent topping that is whipped cream can be made healthy… and low calorie.
It’s also vegan for those interested.
(I learned this technique from another blogger, chocolate covered katie).
What’s great about this recipe is that you can pretty much make it any flavor you want by adding fruit, extracts, chocolate, or pretty much anything else you want… to an extent. Using a lot of citrus doesn’t always work.
To make this, you are going to need
1. 2 tbsp agar agar flakes (I found mine in the organic section of my grocery store. You can also buy off amazon)
2. 2 2/3 cups of milk (I used almond milk)
3. 1 1/2 tbsp water
To create a basic whipped cream flavor, you’ll eventually add
4. a pinch of salt
5. sweetener to taste (I used about 2 1/2 packets of stevia)
6. a few drops of vanilla extract
Start out by combining the flakes and milk into your saucepan. Let sit for about 5 minutes with the heat off.
Turn on mediumish (a bit higher) heat and allow to eventually boil.
Once it boils, turn down to a simmer and let sit until almost all of the flakes are dissolved.
Completely turn off the heat, and cool for about 5 minutes.
Set in your fridge until it turns into a gel. I just let it sit overnight.
And you’re done making it 🙂
When ready to use, take half of the base, and blend it well with the water, salt, vanilla, and sweetener.
