In my opinion, all cream pies have very specific necessary components.
In the case of banana cream pie, those components are the chilled banana flavored pudding, the texture of the crust, the whipped topping, and cold banana coins. That is it, and that is what I stuck to when recreating this recipe.
What you are going to need is
1. 1 cup of bran flakes (or any other flake cereal)
2. 3/4 cup of almond milk
3. 1/3 cup banana flavored yogurt (I used chobani. Just make sure whatever brand you use has a very distinct and strong banana taste. Otherwise it’s not going to taste like banana cream pie)
4. vanilla extract
5. banana extract (optional but highly recommended)
6. almond extract (also optional)
7. stevia to taste
8. cinnamon to taste
9. 1/2 a banana cut into coins
10. vegan whipped cream… i’ll explain this next
For the cream, make the agar base. Take half of it, and add in a little bit of banana extract, vanilla extract, and stevia until it’s the right sweetness for you. Next, add 1/2 tsp xanthan gum.
Now, you’re probably wondering why the heck this is included. Xanthan gum is actually known for its’ thickening agents. Pretty much, adding this to the cream makes it much much much thicker so that it’s even more like regular whipped cream. You only need a very small amount, which is why we only use 1/2 a tsp in this recipe. A little goes a long way.
Okay, now back to the base of the breakfast. Put all of your ingredients in a blender (well except the whipped cream and banana), and blend until combined. Pour into a bowl, and top off with bananas. Set into the fridge overnight or until thickened.
When ready to eat, top off with whipped cream, and enjoy!

This is a VERY filling breakfast, and it really does taste like banana cream pie. You can adjust how banana-y this recipe is based on how much banana extract you use… if you use any. Regardless, I guarantee this will be the perfect treat for you to start your day. Or even end it if you’re looking for a healthy dessert alternative.
