Lemon Blueberry Overnight Oats

Since today was yet another 5:30am shift… I did not have the time to make an elaborate breakfast.  I needed something super quick and easy.  Of course, overnight oats were the best choice for this 🙂

I think the thing I love the most about overnight oats is the endless combinations.  You can make literally any flavor just by changing one ingredient.  That’s pretty cool if you ask me.

Well, lately I’ve been really into the combination of lemon and blueberries.

After getting carried away with trying to bake this flavor combination into a dessert, I decided to go back to square one and keep it as simple as possible.

For this recipe all you need is:

1. 1/2 cup almond milk (or milk of choice)

2. 1/2 cup oats

3. 1/2 cup lemon flavored chobani greek yogurt (or another brand… it just has to have a very strong lemon flavor)

4. 1 tbsp chia seeds

5. stevia, vanilla, and cinnamon to taste

6. blueberries and lemon zest for topping

If you’ve ever made overnight oats before, you know what to do.

Mix 1-4, and set in a container to thicken overnight (or at least for a few hours)

When ready to eat, add sweetener, vanilla, and cinnamon to taste.

Finally, top with your blueberries and zest.


What can I say?  This recipe is simple and good… what else could you want?

Plus the flavor combination makes me think of summer, which makes me happy 🙂
