Woah long title, but every adjective thrown into that is accurate 🙂

If you want it in a breakfast parfait, I bet this will make your day 🙂
This recipe is a fairly simple combination of two of my recipes that I love reinventing.
2. my healthy whipped cream
Prepare the ice cream exactly as instructed. Note, you’re going to have to start a few hours or the night before so the base can freeze completely.
When you’re ready to eat, finish making the ice cream, and put in the freezer while you prepare the whipped cream.
For the whipped cream, use coconut milk as the base, and to flavor it, you are going to need
1. 1 tsp almond extract
2. 1 tsp vanilla extract
3. vanilla flavored stevia drops to taste, or any other sweetener
4. 1/4 tsp xanthan gum
5. 1/4 tsp guar gum
Note: we are only using half of the amount the recipe makes for the agar base.
Simply combine it all in a blender and blend.
Pretty easy right?
Now for assembly, just do it parfait style. a scoop of ice cream, then a scoop of whipped cream.
The best way to have this in my opinion is to mix it together a bit before you eat it. The whipped cream molds in perfectly with the ice cream and gets it to that super rich heavy-cream like extra extra thick milkshake texture.
Oh you all know what I’m talking about 🙂
You could also add in some popped amaranth for more of a crunchy texture.

They are actually really nostalgic to me. I remember my mom always raving about them when we were younger, and then how grown up and cool I felt when she finally took us to get one. Because of this, I think they’re pretty awesome.
