Homemade Larabars: Peanut Butter Cookie Flavored

I have been hearing so many people rave about how amazing larabars are and how they’re one of the best nutrition bars you can buy.

Mainly because of the fact that each flavors contains no more than 9 ingredients.  That’s pretty crazy considering get this… pop tarts contain over 50 ingredients!!

Now I’m sure all of you aren’t surprised that larabars are better for you than pop tarts, but there are a lot of “nutrition” bars that claim to be healthy, but really are just like glorified candy bars.  It’s nice knowing there’s a bar out there that really strives to use only recognizable, good for you products.

There is only one downfall… the price.  You’ll pay well over a dollar… sometimes even close to two dollars… for one.  This is one of those situations where you might end up getting the not so good for you bar not because you are unaware of what’s in it, but because financially, it’s a lot more reasonable.

Well it WAS until now 🙂

Why don’t you just make them at home?

Since they all are ingredients you can readily buy in bulk, it’s extremely easy to quickly whip up a batch for yourself.

Today we’re going to focus on one of the flavors I found pretty darn intriguing… peanut butter cookie

I loveeeeeeee peanut butter cookies 🙂

The ingredients are

1. 1 cup unsalted dry roasted peanuts

2. 1 cup pitted dates

You should probably soak the dates beforehand (set in warm water for a few hours or until soft) if you aren’t using a high powered blender.

Note that the original bar also contains salt.  I didn’t feel like they needed it at all, but you can add if you want.

Simply throw the ingredients into a blender


and blend the ingredients until they form a paste-like texture.  You just need to be able to form it into shapes.

You can either form them into bars


(it makes about 6)

Or, do what I ended up doing and forming them into little energy bites!


Yes, half are a different color.  That’s because I split the batter and made half of them into peanut butter and jelly flavored ones 🙂

You’ll get about 18 bites of one flavor though.

Or you can even get more creative and wrap them into aluminum foil, and store in the fridge so it’s like taking out little pieces of candy!!


Question: What’s your favorite flavor larabar flavor?

Honestly, i’ve never actually tried one… haha.  Too expensive!
