Healthy Breakfast Sandwich

The breakfast sandwich.

From McMuffins and McGriddles all the way to Power Sandwiches and Jimmy Dean D-Lights

Breakfast sandwiches are all around us.

I mean they’re all good don’t get me wrong, but I feel like they’re almost so simple that it would be much more practical to make at home.

You can prepare it anyway you want at home too.  That way you never have to worry about getting bored… a problem I have.

I decided to take matters into my own hands, and come up with a recipe that is delicious and packed with nutrients.

You are going to need

1. 1 egg

2. 1 whole grain bagel

3. a handful of spinach

4. chopped grape tomatoes

5. 1/2 an avocado

6. garlic powder and a pinch of cayenne

Start by taking your tomatoes and spinach


Microwave them for 30 to 60 seconds.  This is just to enhance their flavors and cook them down a bit.

Toast your bagel.  While it’s toasting, start cooking your egg


Cook however you’d like.  You can cook it scrambled, sunny side up… whatever fits your liking.

Spread the avocado over one side of the bagel.  Top with the garlic powder (to taste… can omit or substitute with any other seasoning).  Also sprinkle on the cayenne for a bit of heat.

Top with the egg, spinach, and tomatoes.

Sandwich everything together.


and enjoy!

This is soooo good, and the best part is it’s customizable… and much cheaper than buying breakfast sandwiches!
