Breakfast Cookie Dough

Sometimes in a recipe, an ingredient isn’t added to add a specific flavor.

Sometimes, it’s added to add a specific texture.

For example, in this recipe, PB2 is added… not to achieve a peanut butter flavor, but instead to mimic cookie dough.

All you need is

1. 3/4 cup oats

2. 1/2 cup vanilla almond milk

3. 1/4 tsp vanilla extract

4. a little bit of cinnamon

5. 1 tsp chia seeds

6. 1 tbsp cashew butter

     7. 1/4 tsp blackstrap molasses

8. sweetener to taste

9. a pinch of salt

10. 2 tbsp PB2

11. dark chocolate chips (you need antioxidants right? 🙂 )

Mix together the first 9 ingredients

Then set in the fridge overnight or at least for a few hours.

After, add in the PB2, stir well, top with the chocolate chips, and you’re done!

Don’t be tempted to add more milk.  Be patient and keep stirring.  Just trust me :).

Question: For the record this is my first recipe using cashew butter, and I am very pleased with the results.   What is your favorite way to use cashew butter or just cashews in general?
