I love sweet potatoes more than anyone else I know. Hence why I’ve made recipes in the past featuring sweet potatoes. (Click here for a post workout breakfast recipe).
I think it’s definitely arguable that the best way to have sweet potatoes is in fry form.
Me having a really big sweet tooth, I decided to make a sweeter version.
This recipe is extremely easy, and perfect to satisfy any sweet cravings.
Not to mention it IS healthy 🙂
All you’re going to need is
1. 1 medium- large sweet potato (or more depending on how many people you plan on serving).
2. 1-2 tbsp coconut oil (I used about 1 1/2 tbsp) if you want to know where to get this, check out my favorites page
6. vanilla extract
All of the spices I used I got from the brand McCormick. All of the flavors are very strong and true to what they are.
Start off by preheating your oven to 425F
Cut your sweet potato into fry shapes. The thinner they are, the crispier your fries will be.
In a bowl, mix together your coconut oil and a little bit each of the vanilla and spices.
Toss the fries, and then sprinkle more of the spices on top. Continue to toss until coated well.
Spread on a pan sprayed with cooking spray
and bake for 15 minutes
Turn them and bake for another 10
Set your oven to broil, and broil for 5 minutes
Remove, and enjoy!
If you want to serve these with a dipping sauce, either combine 1/4 cup of greek yogurt with 1 tsp of maple syrup or the same amount of greek yogurt with 1 tsp of honey.
Personally, I prefer the maple syrup version, but I think that’s just because I like maple syrup better in general.
