Homemade Quinoa Muffins

I have been looking for a good muffin recipe for a long time now.

This recipe is from the blog, Eat Yourself Skinny, and it is arguably one of the best I’ve tried through my search.

After a few of my own alterations, here is the recipe that I used:

1. 2 cups cooked quinoa

2. 1/4 cup greek yogurt

3. 1 cup whole wheat flour

4. 1 cup all-purpose flour

5. 3/4 cup brown sugar

6. 2 tsp. baking powder

7. 1 tsp. salt

8. 3/4 cup almond coconut milk (or any type of milk) *I ended up using a lot more than just the 3/4 cups.  Start with this and add until it’s the right consistency

9. 1 egg

10. 1 tsp. vanilla extract

11. 1 tbsp cinnamon

Preheat your oven to 350F

Start off by mixing together your dry ingredients (1-7)

In a separate bowl, mix the rest.

Combine the two and add more milk if needed (it should be the consistency of regular muffin batter).

Divide in a muffin tin, and bake for 25 to 30 minutes.
