In regards to preparing meals, I feel like the majority of people want something that is quick, easy, affordable, and nourishing.
Problem is, a lot of the times you have to pick and choose which ones you want.
If you’re pressed for time, more often than not, you’ll choose the convenience of fast food. Not that this isn’t bad every once in awhile, but what if you could have all of those choices?
That is what this meal is for.
It only takes about 5 minutes to actually make, and it is composed of various superfoods a lot with other nourishing ingredients.
It can also be customizable to fit what you have in your fridge.
I call these meals “garbage” meals. Not that they’re worthy of the garbage, but they’re a great way to use up whatever odds and ends of vegetables you have in your fridge so they don’t go to waste.
In this case I used
1. 1 tbsp balsamic vinegar
2. 1 tsp olive oil
3. chopped up baby tomatoes, onions, and mushrooms
4. 1/2 cup already cooked quinoa
5. a few large handfuls of kale
6. a pinch of cayenne for a little extra something
Simply heat up your pan, and add the oil and balsamic vinegar.
Then, add in all of your veggies and cayenne
Allow them to cook down a little bit before you add in your quinoa
Keep stirring until they’re cooked down to your liking
Place on top of your kale, and you’re done!
You can take this to work with you or just have it for a quick easy dinner.
You can even multiply the recipe a few times and make a large amount at once to have for more than one meal.
