You might know that my mom and I recently went blueberry picking. With 15 pounds of blueberries, we knew baking was in store.
Why not keep it nice and simple and make a blueberry crisp?
This recipe is modified from Taste of Home, and it really makes the blueberries shine.
Plus it’s super easy and AMAZING served warm with cold vanilla ice cream 🙂
You are going to need
1. 3 cups blueberries
2. 1/4 cup sugar
3. 2 tbsp lemon juice
4. 3 tbsp cornstarch
5. 1/2 cup brown sugar
6. 1/2 cup cold butter
7. 1/2 cup flour
8. 1/2 cup oats
9. 2 tsp cinnamon
Preheat your oven to 375F
Mix together the first four ingredients
Pour into an 8 x8 inch baking pan
Mix together the rest of the ingredients using a pastry cutter
Keep doing so until it resembles crumbs
Top on your blueberries and bake between 15 and 20 minutes or until the top is browned.
Serve and enjoy!
